Okinawa Kokuto is the traditional brown sugar made in Okinawa. (100% natural Okinawa sugar cane) Okinawa Black Sugar is made from renowned Japanese sugar cane which adopted the traditional Okinawa Style production. It retained strong sugarcane aroma and natural sugar cane nutrients such as Calcium, Iron, Potassium and Magnesium. The product is enriched with the vitamins that are essential to women. As women may lose large amount of iron during menstruation, black sugar helps replenish nutrient loss. It is ideal for preparing traditional health supplement and making all kind of dishes.

Okinawa Prefecture is the southernmost in Japan. It consists of hundreds of islands and is hundreds of miles (600) long. The islands are subtropical with hot summers and mild winters, and plenty of precipitation. This climate is perfect for sugar cane and there on the islands, it is still grown and made into artisan sugar. Okinawan sugarcane is grown in fields enriched with coral and blessed with strong sunlight and minerals delivered by the ocean spray.

The production of OKINAWA KOKUTO begins with the harvest of one and half year old sugar cane. The stalks are pushed through a pressing machine producing delightfully aromatic cane juice. This juice is then transferred to a huge cooking pot and is cooked down for two and half hours until the liquid becomes syrupy. The sugar cane is squeezed to extract the sugar water. It is then placed in kettles and boiled down. The mixture is raked to remove the impurities, and by the fourth kettle the sugar has become concentrated and is now more like candy.

During this process the hot sugar liquid travels from the large pot to smaller pots in three steps as the volume of liquid continues to shrink. At the end of the process very hot syrup is finally transferred to a shallow iron container, raked for several minutes, and then crystallized and dried. It has a texture, like maple candy, with a flavor that hints of licorice, light muscovado, and a subtle hint of molasses. A complex, multi-faceted sugar. It is rolled out into sheets and then cut into small squares. Finally the brown sugar is cut into cubes for packaging. Not solid or hard, it is soft and crumbly with a wonderful sweet taste.

Unlike other brown sugar, Okinawan brown sugar has a deep, rich flavor. Not only used as a condiment, Okinawan brown sugar pieces are consumed as a sweet accompaniment to tea for relief of fatigue.

Brown sugar is especially popular among women for its high iron and calcium content and is used as part of a remedy for anemia. It is also popular as a wholesome food. Use this great product regularly as part of your everyday diet.

Unlike American brown sugar most of which is produced by adding molasses to refined, processed white sugar, Okinawa Kokuto is made only from 100% pure sugar cane juice. All of the rich mineral and vitamin content of the cane remains in this highest quality product.
